52 WoCC – Eggplant
I have a confession to make. Brace yourselves. I have never had eggplant. Ever. to understand this you must consider that for the first 20 years of my life I refused to eat anything that looked weird. And eggplant looks weird. After that, well, I just don’t know what to do with the damn thing. How do you cook an eggplant? What do you use it for? You’re welcome to post suggestions in the comments and I promise I’ll atleast try it. But for now, we’ll have to settle for the color.

As a vegetarian dish, you can cook it up and pull out the insides and use it as a pasta base with red gravy (spaghetti sauce) and its not too bad. Its not my fav lol, but i’ve had it that way, you can also do eggplant parmesan.
